Alternative Strategies of Nutrition Education uses non-traditional methods to deliver bilingual nutrition education. In the mid-1990s, Jennifer Anderson, PhD, RD, Professor and Cooperative Extension Specialist in the Department of Food Science and Human Nutrition at Colorado State University, became intrigued with the concept of using interactive multimedia (IMM) for nutrition education. The successful adaptation of the bilingual program, La Cocina Saludable (The Healthy Kitchen), is the current major initiative of these efforts.
